Speedy (But Not Instant) Sugar Gratification

I love Jello.

I do NOT love how long it takes for Jello to set.

When I crave Jello, waiting for four hours is not my idea of fun.

And Jello cups? Too expensive when you consider how much Jello you could get out of one 75 cent box.

When I want to make a fruit Jello salad for a last minute, laid-back lunch, I need something faster.

A solution? DEFINITELY! There is always a solution if you look long enough.

This works better and faster in smaller batches as I know from experience. Try it with just one box of Jello per bowl (preferably a large glass measuring cup).

Boil a cup of water and mix the gelatin in for a couple minutes. Then add as many ice cubes as it takes to push the water level up to two cups. Keep stirring until all the ice melts. Add ice cold water from the refrigerator to make exactly two cups. Then place the Jello in the freezer for about 30 minutes. The Jello should be well on its way to gelling by this point. Putting it in the refrigerator for another 30 to 60 minutes should have it just about done.

And voila! You have Jello in less than two hours! What a great compromise!
